A First Year Reflection by Chef Fred

REFLECTING ON OUR FIRST YEAR

At Komo, we're on a mission to make plant based meals a staple on every dinner table through feel-good food that connects people to the planet. 

Fred has been with Komo since Day 1. Creating our first recipes and products from his kitchen with a single-minded approach to share wholesome and hearty plant based meals. Fred is a trained chef and has been vegan for six years prior to joining Komo, so his values and experience helped shape Komo and who we are today - not to mention the incredible energy Fred brings to the team every day. We asked Fred to reflect back on this launch year for our first birthday. We hope this piece can give you a taste of this rollercoaster ride of creating a plant based food company.

It's hard to believe it has already been a year since we launched Komo Comfort Foods!

I can vividly remember before the launch spending a few months in my kitchen focused on creating recipes. Iteration after iteration of lasagna and pies every day. So much cooking that at the end of each day, I'd go to my son and kindly ask if he could do the dishes! For those who know me, I'm not a fan of doing the dishes, and I was using every piece of utensils, pots, and pans available!

For months my house smelled amazing! I mean, who doesn't like the smell of freshly baked lasagna, even at 7 AM in the morning. 

 

A year has passed since we launched on March 4th, 2021. Starting in my own kitchen, and now we are available across Canada and the US! I'm humbled, yet incredibly happy and proud of how our brand has grown. 

Building Komo Comfort Foods has probably been the best working year of my life simply because it isn't really a job per se, and it is actually well aligned with my own personal values. It is what I preach, and it is what I love to do and love to eat. Komo is all about making sharing plant based easier, and I love easy when it comes to dinner!

 

Komo is committed to wholesome, and this is exactly the way I cook, with real ingredients!

Komo is about sharing good food, and I believe there's nothing better than sharing good food around the dinner table with those we love. And, of course, Komo is 100% plant based! You see, I am a health nut in every possible way!

Over the last 15 years, I have adopted new habits with the intention to benefit my health at the physical, mental and social well-being level! Adopting a vegan lifestyle was a big step for me and one that was truly the best change ever. 

With Komo, I get to share my love for food and share my passion for health with more people. Knowing that others enjoy our Lasagna or Chick'n Pot Pie and perhaps changing attitudes towards how possible plant based eating can be is an incredible feeling. 

I love the fact that our team has grown so much in the last year. Ricardo, Rosanna, Ewan, Sina, Adam, Gary, Sharon… are all working towards making Komo Comfort Foods a memorable brand where we get to share our love for real good food.

I am ever so grateful to have had the chance to experience this last year. You see, I am a strong believer in practising gratification. Grateful for all the people I have met, many becoming lifelong friends. Grateful for all the connections I have created with our customers! I am grateful for all the reviews we had received over the last year because those reviews kept me going when times were tough… yes it is tough sometimes - long nights, setbacks, sauce spilling, ingredients not arriving in time, recipes not turning out right! Yet, we always listen and always deliver, which is why I love our small team. 

All in all, I am so happy about this last year where we got to create a brand focused on easy, wholesome, shareworthy, hearty, and, of course, plant based for everyone to enjoy, and in the meantime, it is good for the planet, good for the animal and good for our health! I mean, how good can this get, right?

There isn't a thing I would change about last year. I've learned, laughed, and cried, yet I am happy.
